Each grape varietal was crushed and fermented separately, with week long cold soaks prior to fermentation for color and flavor extraction. An additional two to three weeks of cold soaking were allowed after pumpovers stopped to release any hidden flavors the fruit had yet to express. All lots were barrel aged separately until the final blend was crafted prior to bottling in August 2017.
“This season we chose to really focus on the luscious fruit from a plentiful but ripe harvest. Soft and silky tannins are pushed forward as a showcase to support the dominant flesh of mixed berries of the vintage. In true Kunde fashion of putting our best foot forward, we used Cabernet Sauvignon as a dominant player while the other varieties pack in beautiful fruit flavors. Based on the highly integrated tannins and bright acid structure, consider this wine with a spicy marinara pasta.”
